Muffin Monday

Tomorrow is my day to bring the snack to Bible Study, so I decided on trying out the Whole Wheat Pumpkin Muffins that I’ve had in my ‘to make’ file for a few weeks. I didn’t have any canned pumpkin like the recipe calls for, but my pal Bobbi came to the rescue and offered me some of the pumpkin that she’d roasted and put in the freezer in the fall, when pumpkins were so plentiful.

 

Mom always told me never to make a new recipe when I need to bring food to a pot-luck, or if I’m having guests over, and to stick to what I ‘know’ works. It’s good advice, and probably the reason that I was hesitant about making these muffins and taking them tomorrow. After all, they haven’t passed any ‘taste tests’ by my testers, and people may hate them.

 

Ahhh Well, if that’s the worst thing to happen to me this week, then I’d say I’ll have a pretty blessed week.

 

So, I decided to live a little, and make the muffins anyway. I had planned some changes to the recipe, but I thought maybe it would be best if I first tried them the way they were intended before I go “Wizzyfying” them.

 

As I was mixing them, my cell phone rang. It was Desere and she was stopping in for coffee. I told her about my muffin endevour and she asked when they’d be ready. I responded with, ‘Right about the time you arrive’. Taste Tester number one- on her way.

I finished mixing them up (which took longer than I anticipated, in spite of the simple recipe), and admit that I was a little turned-off by the way the finished ‘raw’ product appeared.

Even before I added them to the tiny mini-loaf pans that I bought when I was home for the holidays, I could smell the cinnamon, nutmeg, and gingerbread spice mix. Even though spring is just around the corner, the scent was heavenly.

 

The timing was perfect, and Desere arrived about one minute after I pulled them out of the oven. The coffee was ready, I popped them out of the pan, and we had one with our coffee, still warm. We both gave them our seal of approval, and after she left, I made 1 1/2 more batches- a few for us, and a few for Desere and the gang.

Below- the recipe for the muffins, which are not only simple to make, but also healthy- low in sugar and fat.

Whole Wheat Pumpkin Spice Muffins

 

Ingredients:

1 egg
2/3 cup sugar
1 can (1-3/4 cups) mashed, plain pumpkin
1 tsp vanilla extract
2/3 cup nonfat milk
1-1/2 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp pumpkin pie spice
1/2 cup chopped walnuts

 

 

Directions:

 

-Position oven rack in center of oven.
-Preheat oven to 400*F.
-Place foil muffin cups in a 12-cup muffin pan; or spray muffin pan with cooking spray. Note: Do not use paper muffin cups; muffins will stick.
-Cream egg and sugar with electric mixer until thickened, about 3 minutes.
-Stir in pumpkin, vanilla, and milk until well-mixed.
-Gently stir in flour, baking soda, baking powder, salt, and spices until combined.
-Do not over-mix.
-Stir in walnuts. (I used Pecans).
-Drop batter into prepared muffin pan, filling cups about 3/4 full.
-Bake in pre-heated oven for 25-30 minutes, or until cake tester inserted in the middle of muffins comes out clean.

Number of Servings: 12
