Lazy Sunday

I’d planned for today to be a lazy Sunday, but in spite of it being a very relaxing day so far, it has also been anything but lazy.   Last week I had some apples that I needed to use (just a couple) so I decided to chop them up, and toss a few ingredients together which became a healthier version of an apple crisp.   It  was so good that I bought some more apples and have made it again.  It’s cooking in the oven as we speak. 

There’s something about the smell of apples, cinnamon and cloves wafting throughout the house that gives me this cozy, homey sort of feeling.   It is one of those little things in life that bring me great pleasure.      Funny how the smallest things can ignite a smile or a warm feeling, isn’t it?   

In case you were wondering how I made the crisp- it’s pretty simple-   I peeled, seeded, cored and chopped 5 sour apples then tossed them with a little cinnamon and raw brown sugar.   (not a whole l0t, but just enough) .   I then created a mixture of rolled oats, almond flour, cinnamon, a touch of cloves, a smidge of raw sugar and about one tablespoon unsalted butter.   I incorporated that all together and then sprinkled it over the top of the apples that I put in a 9 x 13 inch pan.   The smell coming from the kitchen has my mouth watering and it’s not ready.     It probably won’t be real ‘crispy’ on top, simply because I didn’t use much better.    It’s actually very filling compared to regular apple crisp, which is nothing but white flour mixed with oats.   The almond flour definitely gives it a little something extra.    I’ve already told mom that it will be on the Thanksgiving or Christmas dessert list for this year.

I’ve also boiled some eggs that will find their way into both a tuna and egg salad in a little while.  Right now, I’m going to sit here with my cup of Illy Dark Roast and enjoy the silence and who knows, maybe I’ll read more of The Help, since I have been reading it for a while now.  (It’s a great book, by the way.)

    I bet that apple crisp was deeeeliciouso !! ( I smelled the aroma all the way to Florida ) ;)

    I’m going to make a cup of decaf tea…. and vision a square piece of your apple crisp. :)
