Whole 30- Day 22

What a difference a day makes.  As I mentioned yesterday, I was really in a ‘mood’ yesterday.   I had a great nights sleep, despite waking up several times.   I did wake up with a slight headache this morning, but one cup of coffee later and it was gone.    I made an intentional slow start to the day today even though my to do list was long.  I knew it would also mean me finishing work much later than I would prefer, but I thought it was the wiser choice since I was feeling so blah yesterday, plus had the headache.

It paid off-   I’ve had an abundance of energy today and I feel great!    I was able to get everything checked off my to do list and then some, plus here I sit with a little time to spare before Marcel gets home from work.

IMG_1551I will admit that I probably didn’t eat enough today, but I feel great-  For brunch, I made this odd concoction that was a take on the blueberry fritatta that I made last week.    So it was eggs, lemon zest, blueberries, a little pumpkin seeds, a drizzle of almond butter, coconut- oh and let’s not forget the compliant bacon.     It is a weird sounding combination- but it really worked well.  It was delicious!

 

Dinner tonight ended up being chicken breast, sauteed zucchini with lemon zest and Greek seasonings, a half avocado, and half a sweet potato.   It was filling and I am not feeling the desire to eat anything at all.

Tomorrow is another busy work day- and hard to believe that I have 9 days left until I’m done.

I’m looking forward to seeing how I feel at the end and moving forward.  One thing I know for sure already- is that I’ll be taking with me what I’ve learned and applying it to life post Whole 30.

 

Whole 30- Day’s 18 and 19

Yesterday I had good intentions of spending time on the computer catching up across the blogosphere, plus adding a few posts of my own, but work called.  That meant that I needed to take care of that first, and once I finished getting everything checked off the ‘immediate’ to-do list, I was ready for some time to unwind.     I managed to take a photo of breakfast, but I didn’t get one at dinner.

IMG_1460Most of you may be noticing that my breakfasts don’t veer too far off the path.  It isn’t because I can’t or don’t like to be creative with foods, but more because it’s easier for me to not have to think about what I want to eat- but rather have it all planned out the day before.

Yesterday I had baked sweet potatoes, scrambled eggs, a little compliant bacon (read the labels), homemade almond butter and coconut.    I know- it sounds like a really odd flavor combination, but the reality is, it works really really well.

I love it!

Since I ate this closer to lunch time- it was more a brunch than anything, so I had a mandarin in the afternoon.

Dinner was a chicken breast wrapped in bacon, green beans and sauteed zucchini with a 1/4 avocado.     I had a small banana and also a mandarin.  IMG_1459

This morning was not much different breakfast wise than yesterday.    In fact, the only difference is I didn’t add bacon, but I did add pumpkin seeds, hemp seeds, and a few pine nuts.     With a huge cup of coffee with Almond milk (check labels) it hit the spot, plus gave me the energy to buzz through the afternoon.

Since sugar is my business- and I had work to do- I spent all afternoon making my Fleur de Sel caramels, and then I decided to test a recipe I’ve been thinking about for while.    I wasn’t sure how I’d feel- since I usually taste everything before I let it pass across someone elses lips- but that wasn’t the case this time.    The cookies were a hit and received great reviews, which makes me very happy to know.       The great thing for me was, that I wasn’t tempted.   I didn’t want to eat the remaining caramel in the pot, nor did I feel tempted to try a cookie.   At the same time I didn’t feel like I was missing anything.

Am I saying that I plan to never eat a cookie again?  No!  I would be lying to both of us if I said that.   It does mean that I was able to do my chosen profession without a feeling that I was going to end up in the Whole 30 ditch because I’d indulged in sugar- grains – peanut butter- milk.

I celebrate victories like these!

In other news, I continue to have a lot of energy.  It doesn’t mean I don’t ever get tired, but for the most part my tiredness doesn’t hit until the evening, when it actually should.   Yay for that!    I’m going to start kicking up some exercising and see how I feel doing that.  It has been a while, and it’s time to make that switch too.

IMG_1461I’m a firm believer in not trying to focus on too many new goals at once, because it tends to keep us from being fully committed to any of them.  That isn’t what I want, but now that I think I can safely say I’m in a good Whole 30 groove, I would like to add more exercise- start building some well-needed muscle, plus get the heart pumping a little harder.

Dinner tonight is to your left-    A green salad with a little bacon, greens, tomatoes, olives, olive oil and balsamic vinegar.

Chicken breast- green beans, mushrooms and zucchini.   I had a mandarin when I finished.   I felt really hungry at dinner, which is why I ate as much as I did-  I didn’t feel overly stuffed though, but comfortably full.

It’s hard for me to believe that I am almost at day 20.    I’ll go through 31 days- so I supposed this is going to be a Whole 31.

I’ve learned so much- and feel really good.  My face break outs are less and less, plus the horrible break out I had is now almost fully cleared.   I believe as long as I drink enough water, it will remain so, at least I hope so.

Whole 30- Day 16

March 30th, 2016

Zippidy Do Dah-   I made it to day 16.      I’m on the downhill slope, but I don’t really feel like I’m ‘missing out’ on anything, so I don’t feel excited in the way of ‘I’m ready to get this over with’, kind of way.  It’s more of a – “This isn’t nearly as bad as I thought”.   That’s much more realistic.

This morning I had a play date with my good friend and because I wasn’t feeling that hungry this morning, I had my two cups of coffee, and then I had a banana and a few walnuts.

Lunch, since we had lunch out and about- was tricky.    I planned ahead and read the menu the day before, so I knew what I could expect.  They have a homemade tomato soup, but when I asked about it-  he said he thought they  put sugar in it to balance the tomatoes, plus it definitely had cream in it.   Scratch that-    They did have an onion soup which was tomato based, so I ordered that and asked them to leave off the bread on the top- with the amazing melted cheese.      The soup is good and I didn’t miss the cheese-  ‘too much’.

Since I knew that compliant almond or coconut milk was out of the question- I skipped thinking about having a coffee, and had tea instead.     Combine that with time together with a good friend, good chatter, the beach and sunshine-  and yeah- you pretty much can’t go wrong.

Dinner tonight was leftover casserole from yesterday.  It was good, but I still felt it needed something, so I ended up adding some Whole 30 compliant mustard to the top-   It sounds odd, but it really did work as the combination, and tonight I was feeling hungry enough that I ate two portions.    Plus because I’m trying to eat more fruit (because pre-Whole30 I’d gotten out of the habit of eating fruit), I had a mini banana and a small clementine.

That was that.

Energy wise- I feel great, and while I am almost scared to say it-    I also ‘think’ that some of the hair loss I had been experiencing has also slowed WAY down.    It’s too early for me to really know for sure, as I really only ‘thought’ I noticed it last night and this morning, so I’ll have to be more conscious about it in the coming days and weeks, but it seemed like less hair was in my brush after my bath, and also when I dried and brushed my hair.    If that happens to be the case, then that’s another Whole 30 benefit I’ve seen.

My face, which I mentioned being broke out horribly at the beginning- is still clearing.  It is MUCH clearer than it was, but still not 100% clear like I’d love it to be.    But progress is progress and I’ll take it.

Since I’ve had potatoes a few nights in a row now, it’s time to dial back on those evening carbs and omit them again.    I don’t feel like I need that in the evening, so I’ll skip it.

Tomorrow, my intent is to roast some almonds and make some homemade almond butter.   I’ll share how that goes.

Whole 30- Day 14

I made it to day 14, which is ‘almost’ the half way point.   (Insert me doing a happy dance here!)    My biggest thing when I made the decision to start the Whole 30 was that I wouldn’t be able to have dairy, which is something I usually have daily.   I thought it would be really, really difficult.    I thought I may dream of dairy, but as is with most things-  the thoughts we conjure up in our heads tend to be far worse than the reality of things.

Do I miss dairy-   a little.   Mostly, when I’m out somewhere and I want a coffee, or as todays case was-  a Chai Tea latte from my favorite beach cafe.   Thankfully, they are very hipster- so while they didn’t have compliant almond milk- they DID have compliant coconut milk-  SOLD!     Not all places have those ingredients on hand, which means I’ll divert to something like fresh mint tea.   Don’t get me wrong, I love fresh mint tea, but NOT when I am really wanting something with more substance.     I’ve also wanted to make Mexican food a couple of times and haven’t because –  no cheese, no beans, no corn.   Yeah!

IMG_1236But with all that being said-  I feel good and the food I’m eating tastes amazing.  Today’s lunch was based on a recipe that a friend sent me.  She got it from a blog that the name slips my memory at the moment- I felt bad about not sharing the original recipe- so here it is-from Stupid Easy Paleo.  I did my own thing with it-    I used 3 eggs-  I didn’t have coconut aminos so I used smoked Maldon sea flakes- sprinkled a little cinnamon, added some coconut flakes (not sweetened), plus did a little lemon zest (from 1/3 lemon- you could use more if you wanted a more lemon flavor), and the blueberries.   The flavor was SO good!        I am grateful to my friend Lisa for sharing the recipe with me in the first place.   She did it as written and they loved it too!

IMG_1237The photo on the left is when it was bubbling away in my favorite Le Creuset Les Forgees pan.    With that pan you can’t go wrong.  It cooks everything perfect. No need for high temps-  in fact it suggests you keep it low.

The photo on your right, while not actually appealing looking-  was the finished product, after It had been flipped and then reflipped back onto my plate.   As you can see from the missing pieces, I’d already started devouring it.        I added a couple of crushed walnut halves on the top- because it seemed like the thing to do at the time.      Very filling and delicious.

 

Dinner tonight was a little more on the higher carb. side than I’ve had since starting Whole 30.  I tend to eat sweet potatoes for breakfast, and I’ve pretty much avoided white potatoes completely, until tonight.

IMG_1238Tonight I wanted potatoes, so I had some-  I added salt and a drizzle of really good EVOO from Italy-  and along with that-  1/4 of an avocado, some roast beef, and spinach.     The photo is lacking, but the food was good.

Tomorrow, I’ll make potatoes again, as I’m going to make a shepherds pie with a potato and parsnip mix-  along with sour kraut-  kale- and ground beef.  Not sure what the flavor will be like- but I’ll keep you posted.

My energy continues to be good, plus I’m sleeping pretty well too.    I still need to stay focused on my hydration, as I’m still not consistent with getting enough water, but for the most part I do pretty well.

Whole 30- Day’s 12 and 13

March 27th, 2016

I forgot to post yesterday.  I had company for part of the day and I had been buzzing around most of the morning getting a cake finished before it was picked up.   I got all that done, talked to my family and before I knew it the day was over.

Yesterday’s breakfast was the same thing I’d been having for a while-   and lunch was a banana, some nuts and a mandarin orange.    Not ideal, but it worked.    When dinner rolled around, I wasn’t feeling overly hungry, so I made myself a salad with mixed greens, chicken breast, a few walnuts, tomato, olives, a mandarin orange and a little balsamic.  That was it-  It was delicious.

IMG_1182Energy wise- I’ve still been feeling great.   Today (Easter-  Happy Easter, y’all), was much of the same-   Today, I wanted to make something special for Easter breakfast, so that I would feel the festivities.

Marcel was working today- so I made this omelette for myself for brunch.    It is very simple-   eggs, chicken breast, arugula, tomatoes, chives and a few spices.  That’s it.

It was delicious!

I made a roast today in the Crock-Pot with the intention of it being dinner, but I was not in the mood- so I had a salad, with half an apple, 1/4 avocado, plus mixed greens, chicken and a few walnuts.  I added a drizzle of olive oil and balsamic.  It hit the spot perfectly.    Tomorrow I’ll plan to have leftover roast.

It is hard for me to believe that I’m a few days from being at the halfway point of this Whole 30.    I’ve been thinking a lot about how much energy it gives me, and also about how much more I know I would have if I were doing regular cardio (which I’m not).

I am very curious as the journey continues- but even more so, I’m excited to see how I will implement this into part of my lifestyle.

For me, it hasn’t been hard-     I can imagine if you eat more processed foods, it would be harder.   The hardest part for me is making sure I am prepared for meals and have the right things on hand to eat.   That’s it.   Oh, and making sure I stay on top of the water.

My face, which I reported breaking out horribly, still isn’t 100% better.  It is much better than it was, but I still feel as though there is room for improvement there.    We’ll see how that happens as the days continue to unfold.

 

If you asked me right now if I would do it again-   Without hesitation:  YES!

Whole 30- Day 9

March 23rd, 2016

Today was what I would categorize as what example NOT to follow while on Whole 30. 

First,  we had a friend visit last night.  I adore him, plus we hadn’t seen him in a while, so it was great to catch up and visit.     He left around midnight, which was A OK.   The only thing with me is, before I can sleep, I need some unwind time.  I’m not one of those who can come home, crawl into bed and go to sleep, nor can I go straight to bed when company leaves.  My mind is too active, so it takes it time to slow down.

That meant it was VERY late before I went to sleep.   It happens, but thankfully not that often, as this girl needs hear beauty sleep in a big way. :)

I needed to work today, which meant a day of baking.  Items that need to be shipped tomorrow morning.   I was dragging, and rather than push myself into the cupcake kitchen, I took my time, and got a later start.

My breakfast was the same as yesterday-  the sweet potato dish and it was good.

I buzzed through lunch time- and admittedly didn’t take much time for a break.  I ate half an apple with a little almond butter.   Not horrible, but not ideal either.

Dinner, I had made yesterday.  A huge pot of chicken soup- with lots of fresh vegetables. I made enough for us to eat it two days, but after the small lunch, it wasn’t enough.   I ate a banana and a mandarin afterwards, but two hours later and I feel like I haven’t eaten, so I’ll have some nuts, or some almond butter.

I did just realize- upon thinking I would open a jar of peanut butter, that it is NOT allowed during Whole 30, and for some reason I thought it was, so I had some on an apple in the first days.   I think twice.    I am glad I checked before I indulged this time, so I will definitely NOT be having any of that.   Looks like nuts it is for tonight!

My conclusion for today, is that even though I feel very energized-  I also have realized the importance of being prepared.  I haven’t eaten enough protein today- and I can tell.    I didn’t eat enough vegetables today, and I can tell.    Tomorrow is a new day, but today brings the lesson that being prepared is important for success.

 

Whole 30- Day 5

March 19th, 2016

Well, I’ve made it to day five.  In fact, I can say I not only ‘made it’ to day five of Whole 30, but I rocked it thus far.   I’m taking things one day at a time and seeing what each day brings, but today brought me a WHOLE lot of happiness.   I’m generally a pretty happy person anyway, but the lack of energy I’ve been dealing with for the last while has left me pretty deflated.    This morning when I woke up, I felt pretty much like I feel every morning, but I didn’t have that feeling of wanting to spend another hour in bed.   That was the first thing I noticed.

I got up and did my morning routine of drinking a huge glass of water-  followed by a green tea- and then a coffee.  Somewhere in there I had breakfast-  repeat performance of the last couple of days.    (As mom would say-  “Don’t fix what isn’t broke!”)

Yesterday I talked about my overall feeling of tired and weakness, and the lack of energy.    I couldn’t attribute it to the Whole 30 process, because I’d been feeling that way since I had the flu not so long ago.    Today I planned to get out, and get some things done, but even getting ready, I already felt much better than yesterday.   We went to the weekly Farmers type market- to get fresh fruits, veggies, nuts and olives.    It doesn’t mean a lot of walking, but it does mean a little, so off we went.   I felt fine.   Not much dizziness, no achy arms, no general feeling of tiredness.

We came home- and after I put everything away, we went to visit our neighbors who had a little one about a month ago.  We’ve been planning to go over and take a gift, so today we did that- plus we were able to meet the little guy- who is absolutely adorable!

IMG_1032I still felt great, but I also knew I needed to eat something, and I didn’t plan well on that front-    OOps… So I grabbed a little of this-and-that, and turned it into lunch.

In this case, this-and-that ended up being half of a Granny Smith apple, and a ‘throw together’ salad with a half can of tuna in water-  1/4 avocado, some beets  marinaded in Balsamic vinegar, some olives that I’d bought at the market, plus a couple of Brazil nuts.  Oh, and a drizzle of olive oil.

 

Since I really want to start ‘doing’ more in terms of exercise and building my stamina up again, we went out for a walk with the dog.   It wasn’t that far-  probably 1/2 mile or so, but it was something, which is more than I’ve been doing as of late, simply because I didn’t have the energy.

Since I ate a late lunch-  I wasn’t overly hungry come dinner time.IMG_1034    Again, because we were running here and there today, I didn’t feel very prepared for dinner either, so I ran with what felt right for me at that moment, while remaining Whole 30 compliant.

What felt right-  was 12 shrimp that I cooked in a tiny bit of oil and seasoned with garlic, pepper and a few other spices, plus a zucchini that I sauteed and cooked with garlic and spices.   I drizzled with a tiny bit of olive oil- plus added a few cashews (4), because I wanted the extra flavor.     It was very simple, but also delicious.

So tonight I am celebrating the victory of having energy again.  It’s not boundless energy, but it’s MUCH more than I’ve been having, and my heart is doing a happy dance.

Tomorrow is a new day, and I know that each day in the beginning can vary soooo much, so I’m not expecting anything, but seeing what each new day brings.

Today, it brought energy-  tomorrow?  Who knows-   Stay tuned to see.
